  • 1 lb salmon fillets, cut into 1-inch cubes
  • 1 cup bell peppers (red, yellow, green), cut into bite-sized pieces
  • 1 medium zucchini, sliced into rounds
  • 1 small red onion, cut into wedges
  • 2 tbsp olive oil
  • ½ cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 cloves garlic, minced
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Cut the salmon and vegetables into appropriate sizes for skewering.
  2. In a bowl, whisk together olive oil, garlic, lime juice, honey, and chopped cilantro.
  3. Toss the salmon cubes and vegetables in the marinade until evenly coated; let them marinate for about 20 minutes.
  4. Thread marinated salmon and vegetables onto skewers alternately.
  5. Preheat the grill to medium-high heat (400°F) and grill the skewers for 10-12 minutes, turning occasionally until the salmon is opaque and flakes easily.
  6. Serve hot with remaining cilantro sauce drizzled on top.
