  • 3 cups cooked, shredded boneless skinless chicken breasts
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh or canned)
  • 1/2 medium red onion, diced
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • 1/2 cup Greek yogurt
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the chicken by grilling or boiling until fully cooked (165°F). Let cool before shredding.
  2. Chop cherry tomatoes, avocado, red onion, and cilantro.
  3. In a bowl, mix Greek yogurt with lime juice and chili powder; season with salt and pepper.
  4. In a large bowl, combine shredded chicken, chopped veggies, corn, and cilantro. Drizzle with olive oil and add dressing.
  5. Toss gently until well combined. Chill in the fridge for about 30 minutes before serving.
