  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 1 medium onion, diced
  • 1 red bell pepper, diced

  • 4 large eggs
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the diced onion and red bell pepper until soft (about 5 minutes).
  2. Add the black beans, fire-roasted tomatoes, chili powder, salt, and pepper. Simmer for 10 minutes.
  3. Create small wells in the mixture and crack one egg into each well. Cover the skillet; cook until egg whites are set but yolks remain runny (6-8 minutes).
  4. Garnish with cilantro or green onions before serving in bowls.
