  • 2 medium Yukon Gold potatoes, diced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh dill (or 1 teaspoon dried dill)
  • 1 cup heavy cream
  • 4 cups vegetable broth

Instructions

  1. Prepare your ingredients by chopping salmon into bite-sized pieces and dicing the potatoes, carrots, celery, and onion.
  2. In a large pot over medium heat, melt butter (or oil) and sauté onions and garlic until translucent (about 5 minutes). Add carrots and celery.
  3. Stir in diced potatoes and pour in vegetable broth. Bring to a boil then lower heat to simmer gently.
  4. After about 10 minutes or when potatoes are fork-tender, fold in salmon pieces. Cook for an additional 5 minutes until flaky.
  5. Stir in heavy cream and fresh dill; warm through without boiling.
  6. Serve hot in bowls garnished with extra dill or cracked pepper.
