- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup bell peppers (red and green), diced
- 2 cans (14.5 oz each) diced tomatoes with green chilies
- 1 can (15 oz) kidney beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp ground cumin
Instructions
- In a large pot over medium heat, add a splash of oil and sauté the onion, bell peppers, and garlic for about five minutes until softened.
- Add the ground beef and cook until browned, breaking it apart with a spatula (about seven minutes). Drain excess fat if needed.
- Stir in the chili powder and cumin; let the spices bloom for two minutes.
- Add the canned tomatoes (with juices) and kidney beans; stir well to combine.
- Bring to a boil, then reduce heat to low. Cover partially and simmer for at least 30 minutes.
