  • 1 can (15 oz) black beans, rinsed and drained
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper (any color), chopped
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • Juice of 1 lime
  • Fresh cilantro (optional), for garnish

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté chopped onions until translucent, then stir in minced garlic until fragrant.
  2. Add diced sweet potatoes and chopped bell pepper; cook for about 5-7 minutes until slightly softened.
  3. Stir in cumin and chili powder; mix well before adding diced tomatoes and their juices.
  4. Pour in vegetable broth along with rinsed black beans. Bring to a gentle boil, then reduce heat to low and simmer uncovered for about 25-30 minutes until sweet potatoes are tender.
  5. Finish by squeezing fresh lime juice over the chili and stirring in cilantro if using. Serve hot.
