- 6 cups low-sodium chicken broth
- 2 tsp Italian seasoning
- 2 cups fresh spinach or kale
Instructions
- In a large pot over medium heat, add olive oil. Once hot, sauté onion, carrots, and celery for about 5 minutes until softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the chicken breasts, diced tomatoes, and Italian seasoning to the pot. Pour in chicken broth until everything is submerged.
- Bring to a gentle boil then reduce heat to low. Cover and simmer for about 20 minutes until the chicken is cooked through.
- Remove chicken from the pot and shred using two forks before returning it to the pot.
