  • 1 lb boneless, skinless chicken breasts
  • 2 tsp extra virgin olive oil
  • 1 medium onion, finely chopped
  • 2 medium carrots, thinly sliced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes (fire-roasted recommended)
  • 6 cups low-sodium chicken broth
  • 2 tsp Italian seasoning
  • 2 cups fresh spinach or kale

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, sauté onion, carrots, and celery for about 5 minutes until softened.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the chicken breasts, diced tomatoes, and Italian seasoning to the pot. Pour in chicken broth until everything is submerged.
  4. Bring to a gentle boil then reduce heat to low. Cover and simmer for about 20 minutes until the chicken is cooked through.
  5. Remove chicken from the pot and shred using two forks before returning it to the pot.
  6. Stir in spinach or kale and cook for an additional 5 minutes until wilted.
