  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup Gruyère cheese, shredded
  • 1 cup mushrooms, sliced (button or cremini)
  • 2 tbsp balsamic vinegar
  • 1 medium onion, finely sliced
  • 2 tbsp unsalted butter
  • 2 cups whole milk
  • Salt and pepper to taste

Instructions

  1. Cook elbow macaroni in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, melt one tablespoon of butter. Add sliced onions and sauté until golden brown.
  3. Add the remaining tablespoon of butter and sliced mushrooms to the pan. Cook until mushrooms are tender.
  4. Stir in balsamic vinegar and simmer for two minutes.
  5. In a separate saucepan, combine milk and both cheeses over medium heat, stirring until melted into a creamy sauce; season with salt and pepper to taste.
  6. In a large bowl, mix cooked macaroni with the cheese sauce, then gently fold in the onion-mushroom mixture.
  7. Transfer to a greased baking dish, top with extra cheese if desired, and bake at 350°F (175°C) for about 20 minutes until bubbly.
