- 8 oz elbow macaroni
- 2 cups sharp cheddar cheese, shredded
- 1 cup Gruyère cheese, shredded
- 1 cup mushrooms, sliced (button or cremini)
- 2 tbsp balsamic vinegar
- 1 medium onion, finely sliced
- 2 tbsp unsalted butter
- 2 cups whole milk
- Salt and pepper to taste
Instructions
- Cook elbow macaroni in salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, melt one tablespoon of butter. Add sliced onions and sauté until golden brown.
- Add the remaining tablespoon of butter and sliced mushrooms to the pan. Cook until mushrooms are tender.
- Stir in balsamic vinegar and simmer for two minutes.
- In a separate saucepan, combine milk and both cheeses over medium heat, stirring until melted into a creamy sauce; season with salt and pepper to taste.
- In a large bowl, mix cooked macaroni with the cheese sauce, then gently fold in the onion-mushroom mixture.
