- 8 oz penne pasta
- 5 oz Boursin cheese (garlic & herb)
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach
- 2 cloves garlic (minced)
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Cook the penne pasta in salted boiling water until al dente; drain and set aside.
- In a skillet over medium heat, add olive oil and sauté minced garlic for about one minute. Add spinach and cook until wilted (about three minutes).
- In a mixing bowl, combine cooked pasta, sautéed spinach mixture, Boursin cheese, heavy cream, and half of the Parmesan cheese. Mix well.
- Pour the mixture into the prepared baking dish and top with remaining Parmesan cheese. Bake for 25-30 minutes until golden brown and bubbly.
- Allow to cool slightly before serving.
