  • 1 cup large sea scallops
  • 4 tbsp unsalted butter
  • 1 medium yellow onion (finely chopped)
  • 2 stalks celery (diced)
  • 3 cloves garlic (minced)
  • 2 medium Yukon Gold potatoes (diced)
  • 2 cups heavy cream
  • 4 cups fish stock or broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, melt butter until bubbly. Add onion and celery; cook until soft, about 5 minutes. Stir in garlic and sauté for an additional minute.
  2. Add diced potatoes and fish stock; bring to a gentle simmer. Cook until potatoes are tender, approximately 10 minutes.
  3. Introduce lobster meat, scallops, and bay leaves to the pot. Simmer gently for another 5 minutes.
  4. Reduce heat to low and stir in heavy cream until fully blended. Season with salt and pepper as desired.
