  • 2 lbs ripe tomatoes, halved
  • 1 whole head garlic
  • 1 medium onion, diced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  3. On another baking sheet, toss tomatoes and onion with olive oil, salt, and pepper. Roast alongside garlic for about 20-25 minutes until blistered.
  4. Cool slightly, then squeeze roasted garlic into a blender along with roasted tomatoes, onion, vegetable broth, and cream. Blend until smooth.
  5. Pour into a pot over medium heat, stirring occasionally until just simmering. Adjust seasoning as needed.
  6. Serve hot in bowls garnished with fresh basil.
