  • 1 cup grated zucchini (about one medium zucchini)
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a large bowl, whisk together flour, cocoa powder, sugars, baking soda, baking powder, and salt.
  4. In another bowl, mix eggs, vegetable oil, and vanilla extract until smooth.
  5. Combine wet ingredients with dry ingredients, stirring gently until just combined. Fold in zucchini and chocolate chips.
  6. Fill muffin tins about three-quarters full and bake for 20-25 minutes or until a toothpick comes out clean.
