Instructions

  3. In a large mixing bowl, whip cold heavy cream until soft peaks form (about 3 minutes).
  4. Fold in sugar and vanilla extract into whipped cream until combined but fluffy.
  5. Mix bloomed gelatin with mashed raspberries until smooth.

  7. Chill mousse in individual cups for at least two hours before serving. Garnish with reserved raspberries and mint leaves if desired.
