  • 1 cup strong brewed coffee (cooled)
  • 10 soft gingerbread cookies

  • 1/2 cup granulated sugar

  • 1 tsp pure vanilla extract
  • 1 tsp gingerbread spice mix (optional)

Instructions

  1. Brew strong coffee and let it cool slightly. Mix in vanilla and sugar until dissolved.
  2. In a large bowl, whip heavy cream until soft peaks form. Fold in mascarpone, sugar, cinnamon, and optional spices.
  3. Briefly dip each gingerbread cookie into coffee mixture—do not soak.
  4. In a rectangular dish, layer half of the dipped cookies followed by half of the mascarpone mixture. Repeat with remaining ingredients.
  5. Cover and refrigerate for at least 4 hours or overnight. Before serving, dust with cocoa powder.
