  • 1 ½ cups gluten-free graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz softened cream cheese (2 packages)
  • 1 cup creamy peanut butter
  • ⅓ cup unsweetened cocoa powder
  • 3 large eggs (room temperature)
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper.
  2. In a bowl, mix gluten-free graham cracker crumbs and melted butter until combined. Press firmly into the bottom of the prepared pan.
  3. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and mix until light and fluffy.
  4. Blend in peanut butter and sifted cocoa powder until fully combined.
  5. Add eggs one at a time and mix gently with vanilla extract until just blended.
  6. Pour filling over the crust and smooth with a spatula. Bake for 25-30 minutes or until edges are set but center jiggles slightly.
