  • 1/2 cup brown sugar for the crumb topping
  • 1 tsp ground cinnamon for the crumb topping
  • 1/4 cup cold unsalted butter, cut into chunks for the crumb topping

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, and sugar.
  3. In another bowl, mix eggs, milk, and melted butter until smooth. Fold this mixture into the dry ingredients until just combined.
  4. Gently fold in the diced apples.
  5. For the crumb topping, combine brown sugar, cinnamon, and cold butter in a bowl until crumbly.
  6. Fill each muffin cup two-thirds full with batter and top generously with crumb mixture.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
