  • 4 flour tortillas
  • 3 medium Granny Smith apples, peeled and sliced
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 4 tbsp unsalted butter
  • 1/2 cup caramel sauce

Instructions

  1. Preheat oven to 350°F (175°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, toss sliced apples with sugar and cinnamon until evenly coated.
  3. Place some apple mixture in each tortilla and roll tightly. Arrange seam-side down in the baking dish.
  4. Melt butter in a saucepan; stir in remaining sugar and cinnamon. Pour over enchiladas.
  5. Bake for 25-30 minutes until bubbly and golden. Drizzle with caramel sauce before serving.
