  • 1 cup pumpkin puree (not pie filling)
  • 1 cup diced tart apples (like Granny Smith)
  • 2 large eggs
  • ½ cup milk
  • ⅓ cup vegetable oil
  • ½ cup brown sugar
  • ½ tsp ground cinnamon
  • ¼ cup cold butter, cubed
  • ½ cup old-fashioned rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or nonstick spray.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and sugar.
  3. In another bowl, mix pumpkin puree, diced apples, eggs, milk, and vegetable oil until smooth.
  4. Combine wet ingredients into dry ingredients and stir gently until just mixed.
  5. For the streusel topping, mix brown sugar, oats, and cinnamon in a small bowl. Cut in cold butter until crumbly.
  6. Divide muffin batter into the prepared tin about two-thirds full and sprinkle streusel on top.
