  • 4 skinless salmon fillets (6 oz each)
  • 1 cup ricotta cheese
  • 1 cup fresh asparagus spears, trimmed
  • Zest of 1 lemon
  • 2 tbsp freshly squeezed lemon juice
  • ¼ cup fresh basil leaves, chopped
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Rinse and trim the asparagus.
  2. In a bowl, mix ricotta, finely chopped asparagus, lemon zest, basil, salt, and pepper until smooth.
  3. Lay each salmon fillet flat and spread about 2 tablespoons of the ricotta mixture evenly across each. Roll tightly and secure with toothpicks.
  4. Place the rolls seam-side down in a greased baking dish.
  5. In a saucepan over medium heat, combine olive oil, garlic, lemon juice, salt, and pepper. Cook for about 2 minutes until fragrant.
  6. Pour the sauce over the salmon rolls and bake for 20 minutes or until cooked through. Serve warm.
