  • 4 skinless salmon fillets (5 oz each)
  • 1 cup whole milk ricotta cheese
  • 1 cup fresh asparagus, trimmed
  • 1/4 cup fresh basil leaves, chopped
  • Zest of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the asparagus under cold water and trim off woody ends.
  3. In a bowl, mix the ricotta cheese, chopped basil, lemon zest, salt, and pepper until well combined.
  4. Lay each salmon fillet flat. Spread a generous layer of ricotta filling on top and place 2-3 asparagus spears at one end. Roll tightly.
  5. Secure each roll with toothpicks or kitchen twine and place seam-side down in an oiled baking dish.
  6. Drizzle olive oil over rolls and season with salt and pepper. Bake for 15-20 minutes until the salmon is opaque and flakes easily.
