  • 1 lb ground beef (80/20)
  • 6 oz thick-cut bacon
  • 1 cup long-grain rice (uncooked)
  • 1 cup shredded sharp cheddar cheese
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp ketchup
  • 1 tbsp mustard

Instructions

  1. In a large skillet over medium heat, cook bacon until crispy (5-7 minutes). Remove and drain on paper towels, leaving drippings in the pan.
  2. Sauté diced onion in bacon fat for 3 minutes; add minced garlic and cook for another minute.
  3. Increase heat to medium-high and add ground beef. Brown the meat while breaking it up (5-6 minutes), draining excess fat if necessary.
  4. Stir in uncooked rice, ketchup, mustard, and beef broth. Bring to a simmer, reduce heat to low, cover, and cook for about 20 minutes or until rice is tender.
  5. Remove from heat and stir in cheddar cheese until melted. Serve hot.
