  • 4 green onions (chopped)
  • 1 cup frozen peas and carrots
  • 2 large eggs (beaten)
  • 3 tbsp soy sauce (low-sodium)

  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)

Instructions

  5. Push rice to one side of the skillet; pour beaten eggs into the empty space, scrambling until fully cooked.
