- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 8 oz cream cheese (softened)
- 8 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 3 green onions (thinly sliced)
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp chili powder
- Cooking spray
Instructions
- Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper. Cook in a skillet with olive oil over medium heat for 6-8 minutes per side until cooked through. Shred the chicken.
- In a bowl, combine shredded chicken, cream cheese, both cheeses, green onions, cumin, garlic powder, and chili powder until mixed well.
- Lay tortillas flat; add about two tablespoons of filling to each and roll tightly. Place seam-side down in the baking dish.
- Lightly spray the tops of taquitos with cooking spray and bake for 15-20 minutes until golden brown and crispy.
