  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder

  • 2 large eggs
  • ½ cup unsalted butter, melted

  • ½ cup rolled oats

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a muffin tin.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Mix in melted butter, sugar, and eggs until well combined.
  4. In another bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually fold into the wet mixture until just combined.
  5. For the streusel topping, combine brown sugar and oats with melted butter in a small bowl until crumbly.
  6. Fill muffin cups two-thirds full with batter and sprinkle streusel on top.
  7. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
