Description

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 2 cups fresh mixed berries (strawberries, blueberries, raspberries)
  • ½ cup powdered sugar (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Combine graham cracker crumbs and melted butter in a bowl. Press the mixture firmly into the bottom of the prepared dish.
  3. Bake the crust for about 10 minutes until lightly golden. Allow to cool slightly.
  4. In a mixing bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition, then blend in vanilla extract.
  5. Gently fold in half of the fresh berries into the cheesecake batter.
  6. Pour the cheesecake filling over the baked crust and spread evenly with a spatula. Bake for 30-35 minutes until set but still slightly jiggly in the center.
  7. Let cool to room temperature before chilling in the fridge for at least four hours or overnight.
  8. Slice into bars, top with remaining berries, and dust with powdered sugar just before serving.
