Ingredients

  • 3 lbs chuck roast
  • 5 dried guajillo chiles
  • 1 large onion (chopped)
  • 5 garlic cloves (minced)
  • 2 tsp cumin
  • 2 tsp dried oregano
  • 4 cups water (for cooking)
  • 12 corn tortillas
  • Fresh cilantro (for garnish)
  • Chopped onion (for garnish)

Instructions

  1. Remove stems and seeds from guajillo chiles. Toast them in a dry skillet over medium heat until fragrant (about 2 minutes). Soak in hot water.
  2. Blend the soaked chiles, chopped onion, garlic, cumin, oregano, salt, and pepper until smooth.
  3. In a heavy-bottomed pot, sear the chuck roast on all sides over medium-high heat until browned.
  4. Pour the blended sauce over the meat and add enough water to cover. Bring to a boil, then reduce heat and simmer for about 3 hours until tender.
  5. Shred the meat with forks and return it to the pot with juices.
  6. Warm tortillas on a skillet; fill with shredded birria meat and garnish with chopped onions and cilantro. Serve with consomme for dipping.
