- 5 dried guajillo chiles
- 1 large onion (chopped)
- 5 garlic cloves (minced)
- 2 tsp cumin
- 2 tsp dried oregano
- 4 cups water (for cooking)
- 12 corn tortillas
- Fresh cilantro (for garnish)
- Chopped onion (for garnish)
Instructions
- Remove stems and seeds from guajillo chiles. Toast them in a dry skillet over medium heat until fragrant (about 2 minutes). Soak in hot water.
- Blend the soaked chiles, chopped onion, garlic, cumin, oregano, salt, and pepper until smooth.
- In a heavy-bottomed pot, sear the chuck roast on all sides over medium-high heat until browned.
- Pour the blended sauce over the meat and add enough water to cover. Bring to a boil, then reduce heat and simmer for about 3 hours until tender.
- Shred the meat with forks and return it to the pot with juices.
- Warm tortillas on a skillet; fill with shredded birria meat and garnish with chopped onions and cilantro. Serve with consomme for dipping.
