- Preheat oven to 350°F (175°C). Crush Biscoff cookies and mix with melted butter. Press mixture into the bottom of a springform pan.
- Beat softened cream cheese until smooth. Gradually add sugar, mixing until well combined. Mix in sour cream and vanilla extract until fluffy.
- Pour the filling over the crust, smooth the top, and bake for about 50 minutes until slightly wobbly in the center.
