  • 2 medium leeks, sliced
  • 4 tbsp unsalted butter
  • 1 cup shredded Fontina cheese
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to boil and cook the fettuccine until al dente (8-10 minutes). Reserve 1 cup of pasta water before draining.
  2. In a large skillet over medium heat, melt the butter until golden brown (3-4 minutes). Add the leeks and garlic; sauté until leeks are tender.
  3. Lower heat and stir in Fontina cheese until melted. If needed, add reserved pasta water gradually for creaminess.
  4. Toss the drained pasta into the skillet and mix until well coated. Season with salt and pepper; garnish with parsley before serving.
