Ingredients

  • 1 sheet shortcrust pastry
  • 200g Caerphilly cheese, crumbled
  • 2 medium leeks, sliced
  • 3 large eggs
  • 150ml heavy cream
  • Salt and pepper to taste
  • 1 tablespoon butter (for sautéing)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roll out the shortcrust pastry to about 1/8 inch thick and cut into circles to fit muffin tins. Press them into each cup.
  3. In a skillet, melt butter over medium heat. Sauté leeks until soft and translucent, about 5 minutes.
  4. In a bowl, mix crumbled Caerphilly cheese, sautéed leeks, eggs, cream, salt, and pepper until smooth.
  5. Fill each pastry shell with the mixture without overfilling.
  6. Bake for 25-30 minutes until golden brown.
  7. Allow to cool slightly before serving warm.
