- 1 sheet shortcrust pastry
- 200g Caerphilly cheese, crumbled
- 2 medium leeks, sliced
- 3 large eggs
- 150ml heavy cream
- Salt and pepper to taste
- 1 tablespoon butter (for sautéing)
Instructions
- Preheat oven to 375°F (190°C).
- Roll out the shortcrust pastry to about 1/8 inch thick and cut into circles to fit muffin tins. Press them into each cup.
- In a skillet, melt butter over medium heat. Sauté leeks until soft and translucent, about 5 minutes.
- In a bowl, mix crumbled Caerphilly cheese, sautéed leeks, eggs, cream, salt, and pepper until smooth.
- Fill each pastry shell with the mixture without overfilling.
- Bake for 25-30 minutes until golden brown.
