  • 34 pounds pork shoulder
  • 1 medium onion, coarsely chopped
  • 4 cloves garlic, minced
  • 1/2 cup freshly squeezed orange juice
  • 2 tsp ground cumin
  • 2 tsp chili powder (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the pork shoulder and cut it into large chunks. Pat dry with paper towels.
  2. In a bowl, combine chili powder, cumin, salt, and pepper. Rub the seasoning all over each pork chunk.
  3. Place chopped onions and minced garlic at the bottom of the crockpot. Add seasoned pork on top and pour in the orange juice.
  4. Cover and cook on low for 8 hours or high for 4 hours until meat is tender.
  5. Shred the pork with two forks; optionally broil for 5 minutes for crispy edges.
  6. Serve in tortillas or on plates topped with fresh cilantro and your favorite salsa.
