  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together melted butter, granulated sugar, brown sugar, and pumpkin puree until smooth.
  3. Add eggs one at a time while whisking gently until combined.
  4. In another bowl, mix flour, baking soda, cinnamon, nutmeg, ginger, and salt. Gradually add this dry mixture to the wet ingredients and mix until combined.
  5. Gently fold in the chocolate chips.
  6. Scoop tablespoons of dough onto prepared baking sheets about two inches apart and bake for 12-15 minutes or until edges are set but centers remain soft. Cool for five minutes before transferring to wire racks.
