- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz fettuccine pasta
- 2 cups fresh spinach
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded Parmesan cheese
- 1 cup chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook fettuccine in salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, heat olive oil. Season chicken breasts with salt and pepper and cook for about 6 minutes on each side until golden brown and cooked through. Remove from the pan and let rest.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in chicken broth followed by heavy cream.
- Add fresh spinach to the sauce and stir until wilted (about 2 minutes).
- Slice rested chicken into bite-sized pieces and return it to the skillet along with drained pasta. Toss everything together while sprinkling Parmesan cheese until melted.
- Serve warm with additional cheese or olive oil if desired.
