  • 1 tsp ground turmeric
  • 1 cup plain yogurt
  • ½ cup cashew nuts (soaked and blended into a paste)
  • 2 green chilies, finely chopped (adjust to taste)
  • Juice of 1 lemon
  • Fresh cilantro for garnish
  • Salt to taste

Instructions

  1. Heat oil in a large skillet over medium heat. Sauté chopped onions until golden brown (about 10 minutes).
  2. Add garlic and ginger paste; cook until fragrant (about 2 minutes).
  3. Stir in ground cumin, coriander, turmeric, and optional garam masala; cook for about 1 minute.
  4. Add chicken thighs to the skillet; sauté until browned (about 5 minutes).
  5. Pour in coconut milk and cashew paste; simmer gently for about 15 minutes or until chicken is cooked through.
  6. Gently stir in yogurt and season with salt and lemon juice; simmer for an additional few minutes.
