- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 4 tbsp unsalted butter
- 1 cup freshly grated Parmesan cheese
- 1 cup long grain rice
- 2 cups low-sodium chicken broth
- Juice of 1 lemon
- 2 tbsp fresh parsley, chopped
Instructions
- Season the chicken breasts with salt and pepper. In a large skillet over medium heat, melt 2 tbsp of butter. Cook the chicken until golden brown on both sides (6-7 minutes per side), then remove and let rest.
- In the same skillet, add remaining butter and sauté minced garlic for about one minute until fragrant.
- Stir in the rice to coat it with garlic butter, then add chicken broth. Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until absorbed.
- Once cooked, stir in lemon juice and Parmesan cheese until combined.
- Slice the rested chicken and place it atop the rice mixture. Garnish with parsley before serving.
