  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 1 cup freshly grated Parmesan cheese
  • 1 cup long grain rice
  • 2 cups low-sodium chicken broth
  • Juice of 1 lemon
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season the chicken breasts with salt and pepper. In a large skillet over medium heat, melt 2 tbsp of butter. Cook the chicken until golden brown on both sides (6-7 minutes per side), then remove and let rest.
  2. In the same skillet, add remaining butter and sauté minced garlic for about one minute until fragrant.
  3. Stir in the rice to coat it with garlic butter, then add chicken broth. Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until absorbed.
  4. Once cooked, stir in lemon juice and Parmesan cheese until combined.
  5. Slice the rested chicken and place it atop the rice mixture. Garnish with parsley before serving.
