Description

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup wild rice blend
  • 2 cups low-sodium chicken broth
  • 1 cup chopped fresh vegetables (onions, carrots, celery)
  • 10.5 oz can cream of mushroom soup
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C) and spray a baking dish with nonstick spray.
  2. In a medium saucepan, bring wild rice blend and chicken broth to a boil. Reduce heat and simmer covered for about 45 minutes until tender.
  3. Sauté onions, carrots, and celery in a skillet over medium heat until softened (about 5 minutes).
  4. In a large bowl, combine cooked rice (drained), sautéed vegetables, shredded cooked chicken, cream of mushroom soup, and sour cream. Mix well.
  5. Transfer mixture to prepared baking dish, cover with foil, and bake for 30 minutes. Remove foil and bake an additional 10 minutes until golden brown.
  6. Allow to cool slightly before serving.
