  • ¾ cup brown sugar

  • ½ tsp nutmeg
  • ½ cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, cinnamon, nutmeg, and sugars until well combined.
  3. In another bowl, mix pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry mixture until just combined—be careful not to overmix.
  5. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for five minutes before transferring to a wire rack.
