Instructions

  3. In another bowl, mix pumpkin puree, eggs, sugar, oil (or melted butter), and vanilla until smooth.
  4. Pour wet ingredients into dry ingredients and fold gently until just combined; avoid overmixing.
  5. Fold in chocolate chips.
  6. Spoon batter into muffin tins about two-thirds full and bake for 18 to 22 minutes or until a toothpick inserted comes out clean.
  7. Allow muffins to cool for a few minutes before transferring them to a wire rack.
