Description

Coconut Curry Meatballs are a delicious blend of tender ground meat and aromatic spices, enveloped in a rich coconut curry sauce. Ingredients

  • 1 lb ground chicken or turkey
  • 1 cup panko breadcrumbs
  • 2 tsp curry powder
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp coconut oil
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground meat, breadcrumbs, curry powder, garlic, ginger, salt, and pepper until combined.
  2. Shape the mixture into golf ball-sized meatballs (about 20-24).
  3. Heat coconut oil in a skillet over medium heat and brown the meatballs on all sides for 5-7 minutes.
  4. Remove meatballs and set aside. In the same skillet, sauté garlic and ginger until fragrant (about 30 seconds).
  5. Pour in coconut milk and stir; return meatballs to the skillet and simmer for 10-15 minutes.
  6. Serve with rice or naan, drizzling extra sauce over the top.
