- 1 cup panko breadcrumbs

- 1 can (13.5 oz) full-fat coconut milk
- 2 tbsp coconut oil
- 2 cloves garlic, minced

- Salt and pepper to taste
Instructions
- In a large bowl, mix ground meat, breadcrumbs, curry powder, garlic, ginger, salt, and pepper until combined.
- Shape the mixture into golf ball-sized meatballs (about 20-24).
- Heat coconut oil in a skillet over medium heat and brown the meatballs on all sides for 5-7 minutes.
- Remove meatballs and set aside. In the same skillet, sauté garlic and ginger until fragrant (about 30 seconds).
- Pour in coconut milk and stir; return meatballs to the skillet and simmer for 10-15 minutes.
- Serve with rice or naan, drizzling extra sauce over the top.
