- 3–4 lbs beef chuck roast
- 4 dried guajillo chiles
- 1 medium white onion, chopped
- 6 garlic cloves, minced
- 2 tsp Mexican oregano
- 2 cups low-sodium beef broth
- 4 slices sourdough bread
- 2 cups shredded Monterey Jack cheese (or a mix with cheddar)
- 2 tbsp unsalted butter
Instructions
- Soak the guajillo chiles in hot water for 10 minutes until softened. Season the chuck roast with salt and pepper.
- In a blender, combine softened chiles, onion, garlic, oregano, and 1 cup of beef broth. Blend until smooth.
- Place the roast in a slow cooker or Dutch oven; pour the blended sauce over it along with enough broth to cover halfway. Cook on low for 8 hours until tender.
- Shred the beef and assemble sandwiches by layering cheese and beef between slices of sourdough.
- Heat butter in a skillet over medium heat; grill sandwiches until golden brown on both sides (about 3 minutes each).
- Slice diagonally and serve with reserved cooking liquid (consommé) for dipping.
