  • 1 cup roasted red peppers (jarred or homemade)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, drain the rest, and set aside.
  2. Sauté Garlic: In a skillet over medium heat, warm olive oil and sauté minced garlic until fragrant (about 1 minute), ensuring it doesn’t brown.
  3. Blend Sauce: In a blender, combine roasted red peppers and half the heavy cream. Blend until smooth.
  4. Combine Sauce & Pasta: Pour the blended sauce into the skillet with garlic and stir in the remaining heavy cream and Parmesan cheese. Heat until bubbling.
  5. Adjust Consistency: Gradually add reserved pasta water if the sauce is too thick.
  6. Serve: Toss cooked fettuccine in the sauce until well coated. Garnish with extra Parmesan or fresh herbs if desired.
