  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 4 cups fresh baby spinach
  • 1 cup sun-dried tomatoes (oil-packed)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken breasts and cook until golden brown on both sides, about 6-7 minutes per side.
  2. Remove the chicken from the skillet and add minced garlic. Sauté until fragrant, then stir in baby spinach until wilted.
  3. Pour in heavy cream and scrape any bits stuck to the pan. Add grated Parmesan and Italian seasoning; mix well.
  4. Return the chicken to the skillet along with sun-dried tomatoes. Simmer on low heat for about 5 minutes to meld flavors.
  5. Serve hot with an optional sprinkle of Parmesan.
