- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup panko breadcrumbs
- 1 cup Greek yogurt
- 2 tbsp lemon juice
- 2 tsp dried oregano
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the chicken breasts into tender-sized strips and pat dry.
- In a bowl, mix Greek yogurt, lemon juice, garlic powder, oregano, salt, and pepper. Add chicken strips and coat well.
- Place panko breadcrumbs in another bowl. Coat each marinated strip with breadcrumbs and shake off excess.
