  • 1 lb fresh salmon fillets, cut into bite-sized cubes
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • 2 tbsp olive oil (for frying)
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 1 tsp fresh ginger, grated

Instructions

  1. Preheat the oven to 400°F (200°C) and cut the salmon into bite-sized cubes.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with seasoned panko breadcrumbs.
  3. Coat each salmon cube in flour, dip into the egg wash, then roll in panko breadcrumbs.
