Ingredients
- 1 block (14 oz) firm tofu
- 2 tbsp za’atar spice blend
- 6 large cabbage leaves
- 1 cup mixed fresh vegetables (bell peppers, carrots, cucumbers)
- 2 tbsp olive oil
- 2 tbsp low-sodium soy sauce
Instructions
- Press the tofu for 15 minutes to remove excess moisture, then crumble into bite-sized pieces.
- In a skillet over medium heat, add olive oil and crumbled tofu. Sprinkle with za’atar and sauté until golden brown (8–10 minutes), stirring occasionally.
- While the tofu cooks, wash and slice the chosen vegetables into thin strips.
- Take a cabbage leaf, spoon in the crispy za’atar tofu, layer with fresh veggies, and drizzle with soy sauce.
- Roll the cabbage leaf like a burrito, folding in the sides as you go.
- Serve on a platter with extra soy sauce or your favorite dipping sauce.
