  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, rinsed
  • 1 cup sweet corn (canned or frozen)
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 8 oz cream cheese (full-fat)
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. Place the chicken breasts at the bottom of the crockpot. Add diced tomatoes (juice included), black beans, corn, onion, and garlic.
  3. Sprinkle chili powder, cumin, salt, and pepper over the top; stir gently.
  4. Cut cream cheese into cubes and add on top without stirring.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Shred the chicken in the pot using two forks once cooked; stir until creamy.
