Ingredients

  • 2 cups cooked sushi rice
  • 1 tbsp rice vinegar
  • 8 oz fresh salmon fillet, diced
  • 1 ripe avocado, diced
  • 2 tbsp soy sauce (low-sodium if preferred)
  • 1 tbsp toasted sesame seeds
  • Nori sheets, cut into strips (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. In a bowl, mix cooked sushi rice with rice vinegar until combined.
  3. Press about 2 tablespoons of the rice mixture into each muffin cup to form nests.
  4. Bake for 15 minutes or until edges are golden brown.
  5. Allow to cool slightly, then fill each cup with diced salmon and avocado.
  6. Drizzle with soy sauce, sprinkle sesame seeds on top, and serve warm.
