  • 1 lb lean ground beef (80/20)
  • 8 flour tortillas (8-inch)
  • 2 cups shredded cheddar cheese
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Optional toppings: sour cream, fresh cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Add diced onions and minced garlic; cook until softened.
  3. Season with salt, pepper, chili powder, and cumin; mix well.
  4. Spread a layer of enchilada sauce in a baking dish. Fill each tortilla with the beef mixture and cheese, then roll tightly and place seam-side down in the dish.
  5. Pour remaining enchilada sauce over the rolled tortillas and top with more shredded cheese.
