- 2 large eggs

- 1 cup chocolate chips (semi-sweet or dark)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and espresso powder.
- In another bowl, beat eggs and mix in milk and melted butter until smooth. Combine with the dry ingredients until just mixed.
- Gently fold in chocolate chips.
- Fill muffin cups about three-quarters full and bake for 18-20 minutes until a toothpick comes out clean.
- Allow to cool slightly before transferring to a wire rack.
