  • 2 slices sourdough bread
  • 1 medium yellow onion, thinly sliced (about 1 cup)
  • 2 tablespoons unsalted butter
  • 1 cup Gruyère cheese, shredded
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • Salt to taste

Instructions

  1. In a skillet over medium heat, melt butter. Add sliced onions and season with salt. Cook for about 20 minutes, stirring occasionally until golden brown.
  2. Stir in thyme and cook for an additional minute until fragrant.
  3. Butter one side of each slice of sourdough bread. On the unbuttered side of one slice, layer half the Gruyère cheese followed by half the caramelized onions and another slice of cheese. Top with the second slice of bread, buttered side up.
  4. Grill in the same skillet over medium heat for 3-4 minutes until golden brown. Flip carefully and repeat on the other side until both sides are crispy and cheese is melted.
