Description

  • 4 medium Yukon Gold potatoes, thinly sliced
  • 2 large yellow onions, thinly sliced
  • 4 tbsp unsalted butter
  • 2 cups Gruyère cheese, shredded
  • 1 cup heavy cream
  • 1 tbsp fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, melt the butter and add the sliced onions. Cook until golden brown and fragrant, about 20 minutes.
  3. Layer half of the potato slices in the baking dish, followed by half of the caramelized onions and half of the cheese. Repeat the layers.
  4. Pour heavy cream evenly over the layered ingredients and sprinkle with thyme, salt, and pepper.
  5. Cover with aluminum foil and bake for 1 hour. Remove the foil and bake for an additional 20 minutes until bubbly and golden brown.
